"Irish" Themed Recipes to Try this St. Pat's Day!
3/14/2018With St. Patrick's Day just around the corner, the folks at Lindyspring Systems thought it'd be a fun idea to provide you with some fun festive recipes that you and your family can enjoy! So get your green on, grab the family and check out some of these great "Irish" dishes that'll have your entire family feeling lucky and full!
Corned Beef and Cabbage
A corned beef supper makes a glorious Irish feast, and this one couldn't be any simpler to make!
- 2 celery stalks, cut into 3-inch pieces
- 3 carrots, cut into 3-inch pieces
- 1 small yellow onion, cut into 1-inch wedges (root end left intact)
- 1/2 pound small potatoes, halved if large
- 6 sprigs thyme
- 1 corned beef brisket (about 3 pounds)
- 1 tablespoon pickling spice
- 1/2 head Savoy cabbage, cut into 1 1/2-inch wedges
- Grainy mustard, for serving
Traditional Irish Shepherd's Pie
When you're in the mood for a meaty, savory comfort-food classic, a traditional Irish shepherd's pie is an excellent choice!
Here's what you'll need:
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- 1 lb ground beef or 1 lb lamb
- 1 large onion, finely diced
- 3 -4 large carrots, finely diced
- 1 cup frozen peas
- 3 -4 sprigs fresh thyme, finely chopped
- 2 tablespoons flour
- 1 tablespoon butter
- 1 glass red wine
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 cup chicken stock
- 1 large quantity mashed potatoes (estimating 1L or 6 cups, fresh or leftover)
- 1 egg, beaten
- grated parmesan cheese (optional)
Pre-heat oven to 200C/400°F. Saute carrots in the olive oil until starting to get tender. Add in the onions and saute for a minute or two then add the meat. Season with black pepper and thyme. Cook until browned then drain fat. Add the butter and peas. Sprinkle with flour and stir through. Add tomato paste, wine and Worcestershire sauce. Let this reduce slightly then add the chicken stock. Allow to reduce down until you have a thick meaty gravy. Season to your taste. Remove from heat. Grease an oven proof dish** (9x13 works for me, as does an oval baker) with butter and add the sauce. Spoon or pipe the mashed potatoes over top. Brush with egg and sprinkle with Parmesan cheese if using. Bake for about 20 minutes or until the potato is nice and browned on top. Serve as is or with some crusty bread to mop up that yummy sauce! (Get recipe and ingredient list here)
Irish Coffee Bar Blondies
And, of course, no meal is complete without a savory dessert! Raise the bar for Saint Patty's Day with these Irish coffee-inspired blondies!
- 2 sticks unsalted butter, plus more for pan
- 1 teaspoon baking powder
- 2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 2 cups packed light-brown sugar
- 3 tablespoons freshly ground coffee
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup sliced almonds, skin on
- Salt
Here's what you'll need for the glaze:
- 1 tablespoon melted butter, warm
- 3/4 cup confectioners' sugar, sifted
- 2 tablespoons Irish whiskey
Make the Blondies: Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan, and line with parchment so that it overhangs on all sides. Butter parchment. Whisk together flour, baking powder, and baking soda. Melt butter, and pour into a mixing bowl with brown sugar, ground coffee, and 1 teaspoon salt. Stir to combine. Stir in eggs and vanilla extract. Stir in flour mixture until just combined. Pour batter into pan, and sprinkle with almonds. Bake 27 to 30 minutes, depending on how chewy you like your blondies (a shorter baking time results in a chewier blondie). Let cool completely.
Make the Glaze: Whisk together butter and whiskey. Gradually whisk in confectioners' sugar until glaze is thick but pourable (you may not need all the sugar). Using a spoon or a pastry bag fitted with a plain round tip, drizzle glaze over blondies in a rough crosshatch pattern. Let glaze dry 1 hour. Cut blondies into 2-inch squares. Enjoy! Green Water is NOT Okay!
While the American-Irish way to celebrate St. Patrick's Day is to deck yourself (and your foods/beverages) out in green, your drinking water should NOT be green coming from the tap! Green or blueish tinted water can be harmful to your body and usually means your home’s water has excessive levels of copper. And if humans absorb too much copper (either via skin, inhalation or ingestion), it can cause a number of problems such as vomiting, diarrhea, nausea and increase your risk of liver and kidney problems.
